Quick and Easy Mushroom Pizza Bites.
Okay so I've been experimenting with different ways to get my pizza fix that are LDL friendly. This is one that I have really enjoyed.
Mushroom Pizza Bites
Large White Mushrooms - You could also do this with portabella but I had white.
Ground Beef
Pizza or Spaghetti Sauce
Mozzarella Cheese - I used fresh mozzarella but you can use shredded too.
Spices of your choice - These are the ones I used because I wanted a lot of flavor.
salt & pepper
basil
cumin (I LOVE this and used a good bit)
Italian seasoning
garlic powder
onion powder
olive oil
Preheat oven to 350
Clean mushrooms and remove stems. I don't save the stems but you can chop and add them to the meat mixture if you like. Coat mushrooms with light film of olive oil. I rub the oil on them individually so that there is just enough oil to coat them. Place them on a baking sheet or pizza pan and bake for 10 minutes. Take them out of the oven and let them stand for a few minutes. You will notice that the caps are full of liquid from the mushrooms. Take your tongs and empty this out of each one. They will keep releasing liquid, this is expected.
In a skillet add your ground beef (turkey or chicken) season to taste and brown.
Pour meat into strainer and let stand in sink until all fat has been drained off.
Return meat to pan and add sauce and heat through.
Fill each mushroom cap with the meat/sauce mix. Cover with cheese and put back in the oven. You will have to keep an eye on these because it will depend on what type of cheese you use, how your oven heats and how brown you want your cheese. 12 minutes is generally enough time for me, but it may not take that long if you are using shredded cheese. After making them a couple of times, you will know what works for you.
Remove them and let them sit for a couple of minutes. These are hot and sometimes they are also releasing a good amount of water. You can't eat these with your fingers for those reasons. However, they are quite delish with a fork and knife and they satisfy my need for pizza. I hope you enjoy them!

I'd forgotten how much I love stuffed mushrooms and haven't had them for a long time.
I am not a pizza pizza fan, but when I wanted it, I orderd it without the sauce, so me thinks it's just the hot bread and cheese I am craving. However, I am going to cook a batch of stuffed mushrooms with other ingredients just cuz I love em'. Thanks LP

I LOVE mushrooms on pizza, in spaghetti sauce and sauteed served with steak.

We have a lot of snow, so I'm out of fresh mushrooms. I live on a hill, so will wait to make it. May make the cauliflower crust pizza. I have canned mushrooms. JF
