I made Easy Mexican Chicken today. It has been a long time since I made this and I had almost forgotten how easy ii is to make and how delicious it is.
I have gotten lazy recently and have not been making as many LDL dishes as I had in the past. My new goal for 2012 is to make at least one LDL dish each week and try new recipes that I haven't made before. Variety is what makes LDL so interesting and so easy to follow.

Tina, I use this recipe but I also add corn to the mixture. I like that way also.

Mary, I made this last week and it was so good!! It made 4 packets, so, my husband & I had 1 a piece and I put 2 in the freezer for another day! Easy, easy to make!
