I made this variation in a pinch when I was craving lasagna.... It tasted really good!
1 can white kidney beans or cannenelli beans drained and rinsed
2 cups frozen spinach (lightly defrosted)
2 small zuchinnis sliced thin
1/4 tsp italian seasoning
1/2 half pound lean ground beef browned and drained
1 jar of sphaghetti sauce low or sugar free OR 3 cups homemade red sauce.
3/4 cups fat free mozzarella cheese.
spray 9 inch pie pan or 8x8 pan with pam
dump the beans in the bottom in a layer
add the spinach over the top
place the zuchinni coins on top of the spinach
sprinkle the meat on HALF of the pan.
add the seasonings
top with sauce.
I mark the middle with toothpicks
Sprinkle with cheese and bake
35-40 minutes on 350 till hot and bubbly.
Now you have some protien lasagna for lunch
and some veggie for dinner another night..
