Chicken Rouladen

Chicken Rouladen
4 chicken cutlets
8 thin slices mozzarella light
4 pieces low fat ham
1 cup vegetable broth
1/2 pound spring onions/shallot chopped
4 Tomatoes, thinly sliced
3 Garlic, chopped
1 Tsp. tomato paste
pinch salt
1/2 Tsp.coarse black pepper
1 tsp. Mustard
1 Tsp. Thyme, dried
1 Tsp. Basil, dried
1/2 Tsp. Herbasalt
2 Tbs. Oil
fresh basil, sweetener
Wash and dry the cutlets and flatten them out with your palm .
Spice the meat with salt and black pepper.
One side brush with the mustard, spice with Thyme and basil.
put one slice of the ham and 2 slices of the mozzarella on top and roll them up from the thin side.
Secure it with a toothpick. do the other 3 the same way..
Heat up the oil and brown the rouladen real good from all sides.
Take out the Rouladen and keep them warm in the oven..
Sautee the Onions, Tomatoes and garlic in the roaststock.
Add the Tomatopaste , Salt and if you like some sweetener.
After a short time pour in the vegetablebroth and let it reduce for 5-10 minutes
Salt and pepper to taste...
