LDL Sloppy Joes

I made the sloppy Joe's from the recipe listed in the book today. YUM!
I have a hard time measuring portions of chopped veggies, so I just eyeballed the carrots, celery, and onions. I put them in the food chopper I got forever ago...after rinsing off the dust of course. They ended up more pureed than finely chopped. oops! (Guess I should have read the instructions  ;D) I plan on trying it as filling for lettuce wraps and some on a couple of wasa crackers. By the way, what kind of lettuce do you use for lettuce wraps, and how exactly do you make them? Be patient with me... Remember my family is being weened from TV dinners, pb&j, hot dogs from home depot, and Albertson's fried chicken. (And we thought we were so clever since we don't go to fast food restaurants)  My 9 year old and 2 year old were so cute helping me chop and stir. My 9 year old even decided he would take home economics at school or cooking classes when he gets older so he will be able to care for his family. My 2 year old did say much as he tried to chop up an entire bag of carrots with a butter knife. (At least no fingers were lost)
Heading to bed now after 8 awesome days of food fun and freedom! I already feel like a new person. It sure is nice not to go to bed feeling guilty about eating poorly and just hoping that tomorrow will be better!
