Spicy Chicken in a Bag

Post by o2bthin »

Spicy Chicken in a Bag

1 (4 oz.) can chopped green chilies, drained
2 (7 oz.) cans tomato sauce
2 Tbsp. Worcestershire sauce
2 Tbsp. cider vinegar
3 tsp. dried ground mustard
1/2 tsp. cayenne pepper
6 cloves garlic, crushed
2 Tbsp. cumin
1 tsp. ground cloves
8 skinless, boneless chicken breast halves
1 Reynolds roasting bag.

Preheat oven to 350 degrees.  Combine all ingredients, except chicken, in large bowl and whisk to mix well.  Place baking bag on large rimmed cookie sheet or baking dish.  Dip each piece of chicken in sauce mixture and place in bag.  Try not to have thick pieces overlapping.  Pour remaining sauce into bag.  Close bag and cut 2 or 3 small slits in top of bag for vents.  Bake for 45 to 55 minutes or until juices run clear when pierced with a fork.  Serve with sauce.

Or you could make individual pouches, one for each chicken breast, out of tin foil or parchment paper, if you wanted to get a little fancy.

JF, good for company, yes.  Or, have some now and freeze some for later.  BTW, I sure enjoy reading your posts.

*love* Love all the great cooks on this board.  Unless I have a recipe I tend to be a very bland cook -- chicken, salt, pepper, bake.  This sounds great and I can't wait to try it.

OK just tried this chicken, and to me its not all that great, you can eat it but I ended up putting some Barbecue sauce on it and baking 20 minutes longer, then it was wonderful...If you got the time and don't mind cooking this chicken twice make like the recipe calls, then drain the juice off, and pour Barbecue sauce on top of each piece of chicken and bake for 20 minutes more.  If your in a hurry and want chicken but you don't want to cook twice then do the BB chicken.
