4 lbs. lean roast
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. ginger
1 tsp. salt
1/8 tsp. pepper
Mix & rub above ingredients well into roast on all sides.
Brown roast in small amount of your favorite oil again on all sides in your roasting pan. This method keeps the juices in the roast while cooking.
Mix & dissolve:
1 clove chopped garlic
4 bay leaves
1/2 cup red wine vinegar
1/2 cup water
the recipe calls for 1/2 cup brown sugar, which is a no-no I know-know, so use your favorite sweetener and adjust to its sweetness..... hope this makes sense..... I did find Splenda Brown Sugar Blend which could maybe be used in the amount of 1/4 cup.
Thick sliced onions.
Pour dissolved mixture over roast and add onions. The onions should caramelize while cooking.
Cover and cook at 350 degrees for at least 3-4 hours, depending on the size of your roast. It should be fork tender when done.

Just put this roast in the oven,,,, it smelled really good when I browned it with the yummy rub on it. Anyone else tried it?

Just finished eating,,, this roast was very good! Hubby and I both really liked it.... I will definitely make it again..
Also had roasted veggies and Banzo Biscuits.... YUMMMMMMMY!

I have a similar recipe but it calls for 2 Tablespoons of honey instead of the brown sugar. The Splenda brown sugar has sugar in the ingredients so it's not LDL approved. By the way, if it taste like mine, it's VERY GOOD!

Wonder if you can substitute ACV for the red wine vinegar without changing the taste?
