MaryJ, this sounds great and sooo beautiful.  I have a 4# tenderloin, so may try it this week.  I love different recipes.  Thanks, Joyful Friend

I made this today, and it was GREAT!  I used the extra lean pork tenderloin..  I had roasted veggies with it.... YUMMMMY,,, even tried rutabaga's... I loved them!

Roger does not use pork in any way, nor does he eat any sea creatures that crawl and clean the ocean bottoms; however, he does not tell us  NOT to use it.  Processed hams, sausage, bacon, and fatty cuts of any meats should be avoided.  Fresh  lean pork  is OK.  I have lost well eating it.  I like to fix it when I have a large eating crowd.  I have a small one in freezer so I plan to experiment with it.  With sour Kraut and fried apples, it makes a beautiful dish.  Joyful Friend

i don't have balsamic Vinegar can i use my red wine or applecider in place of that.

Wendy, I think you could use half wine and half apple and it would do fine.  Have you ever used Balsamic v.?  It's so great.  I use it for salads with olive oil.  Joyful Friend

i have never used it so I have no idea what the taste is.  Is it more like malt vinegar for fish?

My husband bought some today so I will be making it for Wed. at lunch.  I was going to make it for tomorrow but forgot to take the loins out of freezer in time.  I have to cook it at night so it is ready for lunch and Mike can take it with him when he leaves for work.

I love, love, love balsamic vinegar.  I have it in a spray bottle and use it on all my salads!!!  That way it doesn't put alot on the salad. I like it much better than any salad dressing. It only takes a couple spritzes.  Yummy.  I use it on fresh cooked beets and other veggies.  Gives me pucker power too.  LOL
