Harrison's Meatballs

Little Mary's recipe for Harrison's Meatballs was buried in another recipe so I thought I would like to make it a topic of it's own because these meatballs deserve recognition -- they are great!

1 Lb. lean ground chicken breast
2 tsp. dried oregano
1/2 tsp. garlic powder
1/4 tsp. pepper
1/4 tsp. salt
1 large egg
1 corn thin, totally crushed up (or pulverized in a food processor)
1/8 cup Olive Oil

1. Mix everything except the olive oil together very well in a large bowl.   Make into 16 - 20 ping-pong ball sized balls.

2.  Heat the oil in a heavy skillet on medium-high.  Carefully add the meatballs.  Push them around carefully in the skillet to brown on all sides.  Cook them for 10 - 12 minutes.  Blot up any extra oil with a paper towel.

3.  Either add the sauce of your choice to the meatball pan, or the meatballs to the pot containing the cooked sauce of your choice.  Cover and simmer on low for at least 10-15 more minutes.
