Chicken & Bean Enchiladas

2 Tbs Olive Oil
2 Skinless, Boneless Chicken Breasts cut into thin strips
1/2 C. Chicken Broth
1/2 Large Onion
1/2 C. Red Peppers - diced
2 Tbs Minced Garlic
1 10oz. can Mild Red Enchilada Sauce
1 1/2 C. Frozen Corn (make sure once thawed to drain all liquid)
2 Tbs Cumin
1 tsp. Chili Powder
1 can Red or Black Beans - drained and rinsed
1 C. Black Olive cut in half
1 1/2 C. Shredded Taco or Pizza type mixed Cheese

Put Olive Oil in skillet and add chicken strips, onion, garlic & red peppers.  Cook 10 Min on med. stirring occationally.  Add all spices, chicken broth, thawed corn & beans.  Let cook on med. for another 10 Min covered.  
Pour into glass dish 9 x 13 and pour enchilada sauce over evenly.  Evenly add cheese and olives over top.
Put in preheated 375 oven for 25 min uncovered.  Let set for 15 min. before eating.

*Options:
Add green Chili Peppers
Add Sour Cream before eating
Add 1/2 C. FF Cottage Cheese to chicken mixture before pouring into oven pan.

Enchilada Sauce:

Here is a recipe to make your own sauce:
Ingredients:
1/2 cup chicken broth
3/4 cup finely chopped onion
2 cloves garlic minced
3 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 can (28 ounce size) tomato puree

Directions:

Heat half the chicken broth in a medium saucepan over medium heat. Add onion and garlic and cook 5 minutes or until tender and liquid evaporates.

Add the remaining broth, chili powder and remaining ingredients. Stir together well.

Partially cover and simmer 30 minutes stirring occasionally.

I made this recipe today... with a few substitutions,,, and I used a green pepper instead of red,,, (didn't have a red one) also used pinto beans instead of black or red...  It was excellent!  Hubby and I both loved it... I used 1 lb of lean gr beef,,, a whole green pepper and a whole onion...I also put in a small can of green chiles... YUMMY!  Its a keeper!  :thumbsup: :thumbsup:

This sounds really good but I think I'd much rather use the Hot Pepper Jack or traditional Mexican cheese instead of the Taco or Pizza type cheese you buy in the store.

Also, I think it was BizzyLizzy that posted a recipe that used store bought enchilada sauce. Maybe her recipe would work using the homemake enchilada sauce recipe posted above. At least you'd know what was in it instead of all the additives that we're trying to avoid.

You can use whatever cheese you like.... as with most of the recipes on this board they are very easy to change up and swap things around if you don't like one thing or another....

We are supposed to be using low fat or fat free cheese, as little as possible, and only occasionally.  Every party needs a pooper, right?  :wrong:

Rats again Little Mary, was thinking about doing rat stew for lunch some times (just have to gets a couple first) then adding tomatoes, onions, beans of all kinds, corn, bell peppers, mushrooms, maybe broccoli and garlic..lots of garlic...but as they are not LDL friendly  :sick: ..guess I will just use beef or chicken in their place. :D  :D

There's always iguana.  How about Iguana & Bean Enchiladas ! ! !  Tooo many links to post here.  Go to main message board and search for "iguana".  You will crack up.

That's OK Gwennaford knowing Wendy she will get a kick out of these messages, (but just in case Wendy we are so sorry we messed up you thread for chicken and bean enchiladas, will you PLEASE forgive us all,)....but it sure made my day, and help me to enjoy reading the boards again....
I can't believe some people do eat rats, and think there great.....might taste like chicken, but I don't want to try them and find out....

Rat stew??? Disgusting! Makes my WORM pasta sound even better. Topped with Pizza soup? Gross!!! :bomb:
Guess if you are overwhelmed with temptation to eat anything LDL illegal, just read this thread and completely loose your appetite.

But then again, for nurses, even this doesn't work.
We have become so accustomed to disgusting sights and smells nothing discourages our ability to eat, LOL

You all look like you had fun while I was gone.  My nephew married a girl from China and the first time her mother came to their home in Seattle she was served chicken feet and I can't remember what else.  So from then on when she goes to visit she brings food with her or orders pizza so as not to hurt her daughter in laws feelings.
