Stuffed Green Peppers

Stuffed Green Peppers

4 green peppers, cut off top. wash & seed, blanche in hot water bath until peppers change color
1 lb ground turkey
2 to 3 tbs taco seasoning
1 onion chopped
1 can corn, drained & rinsed
1 can black beans, drained & rinsed
1/2 cup ff cheese
1/2 cup salsa

Brown the turkey and onion. Stir in taco seasoning. Remove from heat and add corn & black beans. Stuff this mixture into the green peppers. Bake for 30 minutes at 375 degrees. Top with ff cheese and bake an additional 5 minutes. Top with salsa and serve.

Sounds like a really good meal for Mike to take for lunches next week.  We just bought green peppers on sale today.

I'm going to the farmers' market to get some peppers in the morning. I like to make these and freeze them (without the salsa of course).

This is one of those "easy peasy" recipes!!

I made these today so my husband can take them to work next week.  I made extra filling to use for taco salads next week for me.  I put extra taco seasoning in them and the filling is delicious so will be good with salsa on it.

When I cook, I don't measure anything so I just guessed at how much taco seasoning to use in this recipe. Well, when I made these again yesterday, I noticed that I used a lot more seasoning than the 1 tsp that I had listed in the recipe. So I went back and modified the recipe. I still didn't measure yesterday but it was closer to 2 or 3 tbs of taco seasoning.

Had these for lunch today. They are so filling. I like your idea of making a taco salad with the filling. Sounds good and would be easy to make.

I ate it over lettuce with olives and salsa.  It was delicious and I have enough for a few more salads this week.  Yummy!

When I read this recipe I though this sounds really good.  One problem.  I don't like really big pieces of bell pepper cooked.  It sounded so good I was trying to think of some other way the use the filling, and your salad sounds like the answer I was searching for.  Thanks to both you ladies.

We always had pork and beans with our stuffed bell peppers that my mother in law made.  Does anyone have a recipe to fake that sweet taste.?

I think you could do cooked navy beans, no sugar catsup,  sweetened with some  all fruit jelly or honey.  I use Splenda in mine, but some people don't use it. Others will help you.  *hug*  JF

I believe there are several baked bean recipes on the boards.
Tweak one of them till they taste like the pork and beans

Thanks for the ideas,  I made the cabbage unstuffed casserole,,my husband loved it.  I am going on a two day car trip and trying to figure out what to bring....so far I have raisins and soybean nuts.  popcorn and hoping to be able to eat ldl at restaurants....

You can eat LDL at restaurants. Most are including healthier meals.
Just have to be picky and ask them to leave off the things you are not eating such as no bun, extra lettuce, dressing on the side, etc

I tried these last night. They were SUPER YUMMY!! Thank you for the recipe. My husband even ate them. He is SUPER PICKY.

They freeze real well too. So you can have a healthy fast food meal in a pinch.
