It's soon becoming that time of year again. Had trouble finding Patsy Fay's famous recipe so am reposting from a word document I saved


HOT PUMPKIN SMOOTHIE

PAT’S FAVORITE “HOT PUMPKIN SMOOTHIE” for cold weather eating

2-3 cans Cannellini or Great Northern beans, drained and rinsed (I also use Navy Beans, too).
1 can sliced carrots, drained
1 20 oz. can pineapple chunks, undrained
3 cans no sugar added pear halves, undrained
2 cans lite or no sugar added peach slices or halves, undrained
1 15 oz. can 100% pure pumpkin
(The original recipe had 1/3 cup of Splenda, but I made it w/o the Splenda and thought it was so much better, so I"ve changed it.)
1 large Tablespoon Pumpkin Pie Spice Or make it yourself using:
1 ½ tsp. cinnamon
¾ tsp ground ginger
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp allspice

Using the VitaMix or blender, process as many cans of whatever will fit in at one time. I usually put in one can of beans, and two cans of fruit. (Using the large container.) Less than that in the small container. Add spice and Splenda to one of the batches. Purée until very smooth and pour into large plastic container. Mix well with a whisk. Refrigerate. When ready to serve, ladle some into a microwave safe bowl and heat up. Makes 6-7 hearty servings.


Pumpkin Pie Smoothie:

1/3 can Pumpkin (small can)
1 banana - fresh or frozen
1/3 can Orange Juice - frozen
Pumpkin pie spice to taste





Linda’s Warm Pumpkin Breakfast

Blend together

1 Can 100% Pumpkin
3 bananas
1 can pears undrained
1 can Pineapple chunks undrained
1 can white beans drained.
1 Tbsp Pumpkin pie spice



Easy pumpkin pudding or smoothie

1/2 cup low fat yogurt
1/2 cup low fat milk
1/4 cup canned pumpkin
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
dash of ginger
1 frozen banana (cut the banana up unless you have a vitamix)
Two teaspoons honey

Combine in a blender. Blend until smooth or put in fridge and eat like pudding.
It is rather thick. If you want it thicker....less milk..more yogurt.

Thanks, Linda. I just love Patsy's hot pumpkin smoothies. They taste so good on a cold morning.

MsHeirloom do you find that pumpkin slows your weight loss? I haven't added pumpkin to my LDL eating plan yet, but with the holidays coming up I plan to do that! I know to only buy the solid pack, right? Here in England I have to order some American-type foods, but that isn't such a big deal. Mail order items from the UK are always delivered very fast here. Often the next day. Anyway, I want to make a LDL pumpkin ''pie''!

Sweetrose- The smoothie has never stalled my weight loss when I am eating "pure" LDL! It is so good, the recipe makes enough for about a week, and it is delicious! It has fruit, beans for protein, and a great pumpkin pie taste!
