Shared with me by one of my clients; this drink used to be a favorite of her now deceased husband.
Ingredients:
1/4 Cup Onion, chopped very fine;
1/4 Cup Butter, (please use 2 Tbsp Olive Oil instead);
36 oz. Tomato Juice, (check ingredients, no sugar please);
2 Cups Bouillon (I assume this is beef broth);
1 Bay Leaf;
Parmesan Cheese
Recipe:
Saute onions in butter (Olive oil for LDL). Add remaining ingredients. Bring to a boil, then reduce heat and simmer for 5 minutes. Pour into mugs or cups and top with a sprinkling of parmesan cheese.
(I'm thinking we can experiment with adding other pureed veggies or beans...)

I think we could puree some beans and add them to this mixture. It would thicken it up a little...and satisfy us alot longer. We could even chop/puree carrots and celery and make it a little more like a V-8 type juice with the beans pureed in it. Just thoughts off the top of my head this early morning.

When I think about it this tomato recipe reminds me of the tomato aspic that can be served cold as a salad in the summer.

This sounds wonderful! I'm thinking that when I make it, I might take my hand blender and puree it until smooth.... mmmmmmmm - sounds good! Thank you for sharing.

I make this for us all the time now. It is almost like a really good tomato soup. I often put my wasa cracker in it.
