Lemon-Berry Iced Tea
1 family size tea bag
4 cups cold water
1 (16 oz.) pkg. frozen blueberries or strawberries
½ cup fresh lemon juice
Splenda or Stevia
[color=purple]Put tea bag and cold water in a saucepan (with lid) and heat until almost boiling. Remove from heat and cover with lid. Allow tea to steep for 2 hours or so.
In another saucepan, bring berries and lemon juice to a gentle boil. Cook, stirring occasionally, for 5 minutes. Remove from heat and cool. Pour berries into a blender and liquefy.
Pour berry puree through a fine wire-mesh strainer into a gallon pitcher or jar. Discard solids. Add steeped tea and enough water to make a gallon. Sweeten to taste with Splenda or Stevia. Refrigerate. Serve in a tall glass with ice.
This would also be good using frozen peaches, pineapple or mangos.[/color]
P.S. You may need to use the back of a spoon to press puree through the strainer, or stir in strainer to help the puree go through...you'll be catching a lot of seeds.
