Citrus-Mint Cooler

Post by Deborah D. »

Found this recipe in the Jenny Craig cookbook, changed the 1/3 cup sugar to stevia to make it LDL.

1    cup loosely pack fresh mint leaves
2    cups unsweetened pink grapefruit juice
1    cup unsweetened orange juice
1/8 cup Stevia to taste
1    cup lemon-flavored sparkling water, chilled
     Fresh mint sprigs (optional)

Combine first 4 ingredients in a medium bowl, stirring well.  Cover and chill at least 8 hours, stirring occasionally.

Pour mixture through a wire mash strainer into a pitcher, discarding mint.  Just before serving, stir in sparkling water.  Garnish with mint sprigs if desired.
