I found this recipe in one of my magazines. It can be used as a dessert or any time you want something cold on a hot summer day.
2 cups unsweetened apple juice
2 cups mashed ripe bananas
1 can (8 oz) unsweetened crushed pineapple, undrained
2 tablespoons lemon juice
1 teaspoon vanilla extract
In a large bowl, combine all ingredients. Pour into an 8-in. square dish. Cover and freeze for 1-1/2 to 2 hours or until almost firm. Transfer back to the large bowl. Beat for 1-2 minutes or until smooth and creamy. Return mixture to square dish; freeze until firm. Remove from freezer 30 minutes before serving. You could also freeze in individual dishes for one serving at a time.

This can also be done quickly with a Ninja.
Freeze the pineapple in a ziplock bag.
Slice and freeze the banana in a ziplock back.
Put the frozen fruit in the Ninja or blender with the juices and vanilla and blend until creamy.
Refreeze leftovers.
