Pumkin Pineapple Pie

Wonderful fruit dishes as well as other LDL approved treats!

Pumkin Pineapple Pie

I just made this and thought it was wonderful.

Pumpkin Pineapple Pie
2 eggs
1 can pumpkin
1 can pineapple, drained
1 packet stevia in the raw
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger
1 banana (may need 2 depending on size)

Mash 1 banana and spread over a pie plate
whisk 2 eggs, add the pumpkin, spices, pineapple and stevia - mix and spread over the pineapple.
Bake at 350 degree for at least an hour - I might try cooking at 375 next time.
serve with sugar free cool ship if desired.

I was going to recommend possibly adding a little more stevia because the pie was not very sweet but the next day it was even better and very sweet. The banana formed the perfect crust to the point that I would never have been able to tell that it was a banana crust - I thought it was the real thing. I always wanted to experiment with pumpkin to create a pie that does not need the evaporated milk which is not LDL friendly. This pie is sooo perfect. I actually craved eating it on the way home from work yesterday. When you look at the ingredients it is perfect for LDL. I lost 4 pounds in 2 days just eating this pie for dinner. So excited. I am going to continue experimenting with pie - I tend to like the pies better than smoothies - so satisfying.

Leilani baked this pie and brought it to work. I loved it!
Would like to experiment with a blueberry pie and apple pie.

Sorry, Mary, I did not think to take a picture.
It looks just like a real Pumpkin Pie.
Leilani did not care for the taste of Pineapple in it, though and will be experimenting with using pears and/or white beans and will make another. If she brings it to work, I will get a picture.
I may try it with Greek Yogurt.
I am going to be busy next couple weeks so won't be trying anything new for a bit.
Looking forward to trying it later in the month though.

I just made this with the blueberries - added some sugar free cool whip - it was heavenly. I ate an entire half of a pie - Is there such a thing as too much pumpkin?

Isn't it awesome that we can live this way and don't have to feel like freaks because we can never have dessert? I can't wait to try this.

Okay I have a question. Did you make this adding blueberries to the pumpkin or just blueberries? I would love to try it with the blueberries but I don't want to mess it up because they are expensive! Thank you! :)

Instead of the pineapple, I added Blueberrys - probably about a cup. I added this to the pumpkin. I loved it and it helps me stay on track! Let me know what you think. Yum!

Well I'm not sure if mine is going to be good or not. I had to make it in a square pan because I don't have a pie pan. I cooked it at 375 for 40 minutes. I just tasted it and it tastes a little dry. However, it's still hot cause I couldn't wait :)) so it may not taste that way when it cools down. I'll let you know. LOL

I made this today with pureed pears and I like it better than the pineapple which takes over the flavor, but I am still missing the milk so next time I am going to use a combination of butterbeans and coconut milk. I will add some butterbeans with the bananas in the crust too. I love cooking LDL.

Well mine tastes great now that it's cooled off. :D I like the banana so much I might just mix it in with the pumpkin next time. I left the pineapple out of mine this time. I'll try it with the pumpkin next time. I think I will like the two flavors together.

I really liked the "pie" much more the next day. Next time I will skip the banana crust which was overwhelming. I really like the pumpkin and pineapple filling as posted and will bake just that .

I love how you can experiment with the different fruits for different flavors. I didn't care for it with apples as much. I do love it with the blueberries and pineapple. I have to try the pureed pears. I was also thinking of trying it with peaches. Yum!
