Rhubarb crumble

Yesterday I was looking for something new to make and I tried this so here it is I call it...
Rhubarb Delight by Deeh
Combine the following in a saucepan and cook for 15-20 minutes until it cooks down to where you want it and then let it cool before you eat it. It is very good!
3 Cups of Rhubarb(add 1/2 cup opf water if using fresh, mine was frozen and had thawed)
2 Cups of Frozen Mixed Berries (strawberries, blackberries, blue berries and raspberries)
1/4 cup of splenda


I found this recipe and I am going to tweak it.

Put above on a baking dish and make the topping.
Mashed banana, white bean puree, a dash of vanilla and an egg. Add some sweetner if needed, and bake at
350 till bubbly and crisp on the top.

YUMMY YUMMY TO THE TUMMY! I can't wait to try this one.. I am excited to hear how the topping comes out...

Is your way of thinking: the beans puree will come out crunchy?..gosh...I can't wait to get in the kitchen after Tuesday ( my weigh in)..this is diffinetly a "variety recipe" I will try..

I so miss my momma's rhubarb pies.
I will definitely have to try this one.
Might try Pineapple juice for the sweetener or even a little honey if I don't like the stevia in it.

I've never had rhubarb. I wonder if this would work with just blueberries?

I haven't tried this one either. It's still on my To Do List...
Me thinks....that after I get the topping perfected..anything and I mean any fruit will work in it..
To me, this recipe is all about the topping!! :D
I might use pear instead of bananna or both. I don't do spenda so I am going to 1/2 it. One with stevia and one with no added sweetener. Just using the banana and the pear.
Rhubarb was my Dad's favorite too!
By itself it takes a lot of sweetening. As in the old days, a lot of sugar :( .
I have added rhubarb to other fruit dishes and found the flavor is strong.
So, that is what makes me want to use pears and banana's as the sweetener.
Ok, I have confused the world enough today.

Guess that was what I liked about rhubarb pie......mom used lotsa sugar.
It is very tart but I would love to learn to eat it not so sweet.

I started a long time ago, just by boiling some rhubarb down and adding a tablespoon at a time to my unsweetened applesauce. Little by little it gets almost up to half and half..I have always eaten unsweeten applesauce. Mom used to by it that way. Oh, it used to come in chunky. That was my favorite!

Ive never made a crumble in my life but today I bought some rhubarb with the intention of making one.

Anyone got a tried and tested recipe as opposed to one pulled off the internet please?


