Custamizable LDL Custard

1 tablespoon or packet of unflavored gelatin
2 cups unflavored soy milk
1 teaspoon pure vanilla extract (or other LDL friendly flavoring)
Splenda or Stevia to taste
Heat the soymilk in a small saucepan. Add the unflavored gelatin and stir until it dissolves. Remove from heat; add flavoring and sweetener. Pour into custard cups and refrigerate until set. Sprinkle with a little ground nutmeg or cinnamon and serve.
Variations:
For Pumpkin, reduce soymilk to 1 1/2 cups, and add 1/2 cup canned pumpkin and pumpkin pie spice(s) to taste.
For fruit flavors, add a little pureed fruit of choice and reduce the soymilk by the same amount.
For cappucino, add a little expresso or instant coffee.
Try almond extract instead of vanilla for variety.
