I made a dessert from rutabagas and apples and my husband (and guinea pig) thought it was pretty good!
I call it Apple-baga.
Ingredients:
2 cups apples, cubed (any baking apple)
3 cups rutabaga, cubed
1/3 cup OJ
1/8 cup raisins
1 Tbsp Smart Balance Light Spread
Cinnamon, Splenda, apple pie spice, and vanilla extract to taste
Boil rutabaga cubes in water until fork tender
Cook apple cubes in microwave on high, until fork tender
Using a mixer (or food processor) beat into a rough consistency (leaving some chunks)
Stir in the rest of the ingredients
Serve warm
