Strawberry rhubarb jello dessert or salad

I have made this twice with rave reviews so going to post it.

We have lots of rhubarb now and thought others might also so came up with this way of using it.

Cook two cups of frozen strawberries or fresh, 2 cups of sliced rhubarb and 1/2 cup of apple juice until tender and blended.  Add enough splenda to sweeten to your taste.

Dissolve a large box of strawberry sf jello in two cups of boiling water.  Stir until totally dissolved.  Add two and 1/2 cups of  strawberry rhubarb sauce.  Stir well and chill until firm.

Hope all of you who have rhubarb will enjoy this.

Thanks for posting!  I was planning on doing something much like this, but just haven't done it yet.  I wish I had rhubarb growing in my yard...my parents always had it growing, but I've just bought frozen.  We used to make a sauce like this, with more liquid so it didn't gel completely, and, over ice cream, it's one of my very favorite things.  I can eat it as a sauce, too, so I'll be fine.  I can put it on popcorn flour pancakes.

I love love love rhubarb...I think I'll make some rhubean muffins!  Gotta put garbanzos on the grocery list.
