Recipe from: JoAnna Lund-Grandma's Comfort Food Made Healthy

1/ 1/3 cups nonfat dry milk powder
3 cups water
2 Tablespoons white vinegar
1 cup (8-oz. can) crushed pineapple, packed in its own juice, drained
1/4 cup Splenda sprinkle
1 teaspoon coconut extract

In a large bowl, combine dry milk, water and vinegar.  Let set 5 minutes.  Stir in drained pineapple, Splenda and coconut extract.  Mix well using a wire whisk.  Cover and freeze about 1 hour or until slushy.  Mix well, re-cover, and continue freezing for another 3 hours or until firm.
Serves: 4 (1 cup)

So sorry Martha, this won't work as a Let's Do Lunch recipe because of the milk.  The references to LDL "ice cream" you see on the boards are frozen fruit mixed with enough thawed fruit to make it possible to puree in a Magic Bullet or a super high-speed blender like Vita Mix.  They are really more of a sorbet and do not contain any dairy.  The addition of frozen banana and/or mango makes smaller ice crystals & gives the result a creamier mouth feel.  Here's one example:  http://www.letsdolunch.com/boards/index ... pic=3476.0

If you wanted to change your recipe to puree a can of pineapple with its juice (make sure it is nothing but 100% pure pineapple juice and NO ADDED SUGARS of any kind) with some coconut extract, a little Splenda & a little squeeze of vinegar or lemon juice and freeze THAT, stirring with a fork several times as it freezes to break up the large crystals, -- then my friend you've got yourself some LDL "ice cream", "sorbet", "Italian Ice" or "Granita" - whatever you want to call it.  I would call it a delicious summer treat!

Thanks Roger and Gwen.  I've read the book 2X but apparently didnt get the powdered milk not being ok.  I think I will try recipe the way you suggested.  I just love pineapple.  Martha
