Apple-Carrot-Zucchini-Banana-Muffin

Just a occational food...i think, still need approval from our sherriffs...

2-3 Apple, peeled, diced,
2 sm.carrots, shredded
1 sm. Zucchini, shredded
1 Banana
1 Tsp. Bakingpowder
2 Eggs
1/2 cup Garbanzoflour
1/4 cup shredded Tigernuts, Chufa
1/4 Cornstarch

Preheat oven to 340°

Mix the eggs untill fluffy, add the flour, chufa, starch and bakingpowder., mix well.
Add the the rest, fill in muffinform and bake for around 25 Minutes...

Hi Mary,

i baked them once and then i froze them.
So when i am invited to coffee and cake i take one of those with me...

Food Police/Mary-
  Is there a difference between using garbanzo flour and whole garbanzo beans liquified in a blender? Is the fiber content more intact with the whole garbanzos?

Hi Cindi -- There has been a great deal of discussion about this question and nobody really knows the answer for SURE.  I believe the general consensus was that it's okay to use garbanzo flour occasionally and to enjoy baked goods made from whole garbanzos occasionally.  Diabetics have experienced elevated blood sugars from eating them daily.  Niki breads her chicken with a little garbanzo flour, but you don't get enough that way to really do any damage.

Just keep in mind that both these forms of using garbanzos are WAY beyond the state the beans appear in nature (processed).  One of the foundational principles (in my understanding) is that, the more processing we do to our foods before eating them, the less weight we will lose, and COULD possibly gain weight.

Bottom line -- when I REALLY REALLY want a muffin - I will make & eat three or four of the Beanana Muffins with a clear conscience, but then I have to be done with them for a while.  

I'm looking forward to trying ChrissyV's recipe.  I have not yet experimented with zucchini in the muffin recipe, but it sounds very good.  There is a lot of fruit & veg in comparison to a relatively small amount of flour & cornstarch so I think it would be okay.  I don't know anything about tigernuts & will probably need to find a substitute for them.  Looking at the website makes me think they may be like chestnuts or water chestnuts.

Tigernuts or Chufa has nothing to do with Nuts...it is a tuber..
