Lemon Pie

1 individual tub of crystal light
4 Tbs corn starch
3 C. cold water
2 egg yolks

Mix cornstarch and crystal light together.  Add 1 cup water slowly while stirring until dissolved
Add 2 cups water to mixture in pan.  Stir continually on med heat until mixture boils.  Take (in small bowl) 2 slightly beaten
egg yolks and add enough hot liquid to eggs until they are warm.  Slowly pour eggs into lemon mixture while stirring.
Boil 1 minute.  Put in dish and refrigerate until cool and thick.

Meringue can be added to top.  Put into custard cups and bake.

Yes when I make meringue I use the egg whites with cream of tarter and granulated splenda.

When I made the lemon pie without meringue I didn't bake it at all.  With the meringue I bake on 350 degrees until nice and brown .  I can't remember how many minutes but I would say 15 min or so.

Just remember Crystal light has aspertame in it and it is a big no, no for me and many others.

I would think for the ones that can't use crystal light you could use koolaid lemonade powder and your own powdered sweetener.  I have tried making lemon pie with just lemons  but it was alot of work and came out terrible.

Also, you need to realize that corn starch is very processed (more so than corn meal) and might produce results you really don't want.  I think 4 tablespoons is a lot -- a fourth of a cup.  I've seen it in a few recipes, but I personally stay away from it.
