Red Berry Meringue Pie

Post by wendysgoodnews »

I made mine in a pie pan and scooped it out with a spoon.  It was very good

1 1/2 c. strawberries
1 1/2 c. raspberries
1 1/2 c  blueberries
3  egg whites
3/4 c.    non-sugar powder
1/2 tsp  cream of tarter
1/2 tsp  vanilla

Preheat oven to 400

Wash & prepare fruit, hulling strawberries but leaving whole.
Mix berries together and add 1/4 c. non-sugar and vanilla.  Fill custard dishes 1/2 full.
Whisk eggs until stiff peaks form
Add sugar & cream of tarter whisk until shiny
Divide between dishes
Bake for 15 min.  Remove and let cool 5 min before serving

Optional:
add cinnamon

Wendy, I want to thank you so much for the recipes you have recently posted. They sound sooo good - this one, the custard fruit salad, and the cherry smoothie.  Thanks so much for sharing! I am very lacking in LDL recipes and these sound like they would taste just like dessert which I am beginning to miss alot!

You are welcome.  Before LDL I was a sugar-aholic and now could care less because of all the wonderful fruit recipes.  If I find I haven't had fruit for a couple days I start to get cravings for sweets so I like making desserts that satisfy those needs.

I have not been able to find non-sugar powder. Any suggestions?

yes Truvia would work in this recipe.  I have found with Truvia it takes less then called for in recipes so would have to experiment
