Apple Cider Beans

Post by wendysgoodnews »

I was looking for a different bean side dish and found a couple that looked interesting I will be putting on the boards.

APPLE CIDER BEANS

1/2 lb ex lean hamburger (or turkey burger)
1/2 c. onion diced
1/4 c. red pepper diced
2 c. red beans - undrained
1 c. apple cider
1/2 c. raisins
1 tsp cinnamon
1 tbs garlic minced
1/4 c. celery

1)  In skillet fry burger, onion, garlic & celery in small amount of olive oil.
2)  Stir in remaining ingred.
3)  Bring to a boil.  Reduce heat and simmer.
4)  Uncovered- cook 20 to 25 min stirring occasionally

What a great alternative to corn syrup laden baked beans!

I haven't tried it yet, just ran across the recipe yesterday.  So if anyone tries it before I do please post how you liked it and what it tastes like.

I added some apple cider (made from a blend of Honeycrisp apples) to the Rsted Butternut Squash soup last week in place of some of the chicken broth and it gave it just a slightly sweet flavor.  So, I then added it to my turnip/mustard greens I cooked this weekend, and it was really good.  It's just a slightly sweet flavor with a hint of apple, but not overpowering at all.  Both dishes were extra yummy with the cider!!

So, IMHO. . .apple cider made both dishes better !
