Italian Mushrooms

I served these as a side dish for a brunch I hosted over the holidays and they were well received.

I lb. meduim fresh mushrooms
1 large onion, sliced
1/2 cup Smart Balance Light
1 envelope Italian salad dressing mix

In a 3 quart slow cooker, layer mushrooms and onion. Comine butter and salad dressing mix; pour over vegetables. Cover and cook on low for 4-5 hours or until vegetables are tender. Serve with a slotted spoon.

P.S. My slow cooker was in use for something else so I cooked them on the stovetop -- worked just as well.
