This sweet and savory spinach side dish goes particularly well with grilled or pan seared steak.
Italian Spinach with Garbanzo Beans and Raisins
1 tbs olive oil
1 clove garlic, smashed
1/4 tsp crushed red pepper
1 can (15 to 19 ounce) garbanzo beans - rinsed and drained
2 bunches (10 to 12 ounces each) spinach, washed and dried very well
1/4 cup golden raisins
1/2 tsp salt
1. In 5 quart dutch oven, heat oil with garlic cloves over medium heat until garlic is golden, discard garlic cloves. Add crushed red pepper to oil and cook 15 seconds. Stir in garbanzo heans and cook, stirring. 2 minutes or until hot.
2. Increase heat to high. Add spinach, raisins, and salt. Cook, stirring 2 to 3 minutes, or just until spinach wilts. serves 4
