I love Guacamole and I love avocados, but I know that while full of good mono-saturated fats - too many are too much of a good thing. So I was pleased to find a substitute that taste great. It's not exactly the same as the mouth feel is different without all that good fat. But it is tasty.
Asparagus Guacamole
4 Cups Asaparagus - Cut and trimmed
1 Clove Garlic - minced (or more for the garlic lovers)
2 tsps Lime Juice
1/4 Cup green chilies - chopped (or 1 can)
1/2 tsp salt
1/2 tsp cumin
2 Tbs Onion - finely minced - or grated
1/2 Cup of tomatoes - seeded and chopped
Cook Asparagus in water until tender. Drain and cool. Place Asparagus and all ingredients (except onion and tomato) in food processor or Ninja and Whizz until smooth. Taste for seasoning - adjust if needed. Scrape into a bowl and gently stir in onion and tomato. The seasonings can be adjusted to suit your taste, as I think everyone has their own mental picture of perfection for Guacamole. I sometimes add olives and roasted red peppers. I use endive, jicama, kholrabi, and corn thins to scoop up this yummy treat.

Anyone try this? I love avacados & asparagus.........just not sure about the asparagus replacing avacado?
