Sweet Potato Pumpkin Casserole

Sweet Potato Pumpkin Casserole

2  Sweet Potato
2 C. Blended Pumpkin
1 tsp. Maple flavoring
2 tbs pumpkin spice
2 Tbs butter
4 Eggs
1 1/2 C. Splenda
3/4 C. Splenda Brown Sugar

Peal and cut up sweet potato, boil until soft.  In a mixing bowl put pumpkin, pumpkin spice, maple, splenda, 4 eggs and mix.  
Drain sweet potato and cool.  Pour into pumpkin mixture and blend together.
Pour into casserole dish.  Sprinkle splenda brown sugar evenly over top. Melt butter and pour over brown sugar.
Add 2 tbs crushed walnuts (optional)
Bake 350 for 1/2 hr

Wendy, thanks for this recipe, it sounds good.  But what is blended pumpkin?  Is that just canned pumpkin with no sugar or spices?  I want to try this.

Yes it is just canned pumpkin or I cook pumpkin in my oven then I scrape out the pumpkin and blend it so it is creamy.

I'm assuming this gets baked? I'm guessing 350* for about 1/2 hour?

Wendy I thought that the splenda with brown sugar actually had brown sugar added?  I'm not up on all the sweeteners so I'm just asking.  :D

I sprinkle it on top sparingly so it has never effected me.  I also use it in making my apple pie.  I am not sure if it is totally LDL but have used it all along but very seldom.

You can use the brown sugar like Roger used the blue cheese.
As long as you can use it sparingly as an occassional treat it is a little something to help keep you from going totally off plan.
If anything causes you to go on a feeding frenzie or spikes cravings for something, then best to leave it out.

Thanks Y'all.  I best leave it alone then.  It's just like Roger can't handle the soynut butter.  He said he wants to eat the whole jar at one sitting.  I can have a spoonful and not want it again for weeks.  Roger can eat the Cool Whip light.  I know if I ever got that I would eat the whole tub.  I used to buy the full fat Cool Whip.  I kept it in the freezer and I would go eat spoonfuls of it all day.  Like little cool whip pops.  BAD idea!  :laughing:
