Raw Tomato Salsa

WHAT YOU WILL NEED:
- 3 to 4 Large Tomatoes
- 1/4 of a Red Onion
- 2 cloves Garlic, minced
- Juice of 1 Lime
- 1/4 cup Cilantro
DIRECTIONS:
1. Combine all ingredients into a food processor, and pulse until your desired consistency.
I saved some extra tomato to add to it. I like mine chunky!
*Since I've been trying to cut down on my bread intake, I started using lettuce.
So I took a large leaf of romaine lettuce, put some chunks of avocado on there, and then added my salsa.
** I think I would also add chopped seeded jalepeno or bell pepper

Wouldn't this be heavenly this summer with all of the fresh tomatoes from our garden! I'm drooling just thinking about it. I have some in the freezer from last year that came from our garden. But, I don't think they would work. I use those for cooking and they taste so fresh!

I am so looking foreard to fresh tomatoes.
Last summer we barely kept a few petunias alive.
Hoping for a cooler, wetter summer this year.

Tomatoes were ALL we got last year!! Like you said, it was just too dry & hot for our garden to do much of anything. But, I had planted some new kinds and they did well at first. I have some yellow, orange & red ones in the freezer. I need to get some out today and make something out of them!
