Roasted Balsamic Onions

Sounds Yummy..I love onions

3 lg. white onions, peeled and quartered
3T evoo
salt and pepper to taste
1/4c balsamic vinegar
1/2t sugar( use LDL sweetner)

Preheat oven 350 degrees
In bowl, toss onion quarters with evoo and balsamic vinegar, sugar and salt and pepper
Place in an ovenproof, large, non-stick skillet..with aluminum foil cover over skillet
Roast for 20-25 min....then remove foil-toss onions
Put back in oven another 20-25 min. uncovered

I was looking for recipes that I have not tried and came across this one. I decided to try it as my husband loves onions in any form (even raw eaten like an apple). This recipe was fantastic. I served it with roast chicken.

Oh I LOVE onions. I am so glad to see people starting to go through some of the older recipes. There are so many good ones that I forget about some of them. :D I'll try this one this week too!
