Zucchini Zuma

Zucchini Zuma
3 small Zucchini, cut lenth-wise then slice in half-moons
2 slant cut or shredded carrot
2 stalks of celery diced
1 small sweet onion diced
2 cups frozen corn
1 can rinsed and drained black beans
1 tsp. cumin
1 tsp. Mrs. Dash southwestern seasoning
Salt and pepper to taste
Cherry tomatoes cut in half.
Directions:
Saute carrots, celery and onions together in EVOO or EVCO. When carmelizing add zucchini and cook till crisp tender. Add
remaining ingredients and toss till heated through. It is delish!!

Looking forward to getting home and making my own yummy food. This hospital food is nourishment (if one orders carefully), but certainly not tasty. I'm going home on Saturday.

We have some leftover sops in the freezer. Denny loves to eat, so he will be inspired to help put a nice veggie, bean, meat soup. I can sit and chop veggies. He can assemble and stir! He'll never ,et us go hungry.
