My husband and children really enjoy pasta every now and then. So, I make some for them along with some homemade pasta sauce, and instead of the pasta, I have this with the sauce:
1 large zucchini or small eggplant, sliced into 1/4 inch thick slices,
Sprinkled with Italian seasoning and a little salt & pepper,
Sprayed on both sides with a little olive oil,
Then broiled, on a lightly sprayed cookie sheet, about 7 to 8 minutes per side.
It makes a very satisfying substitute for pasta.

this reminds me of some thin carrot and zuccinni coils that i had at a chinese restaurant. i just found this peeler tool and i am going to try to make some thing like this to replace pasta...
