NEEDWIFES POTATO SALAD

THIS IS SO GOOD. I ALMOST THOUGHT I WAS CHEATING LOL   :thumbsup:                                                                                                                                                                                                                                                                                                                                                                                                                                                                          
1 large head of cauliflower
6 hard boiled eggs
1 cup chopped onion
1 cup chopped dill pickle
1/2 cup chopped celery
1 1/2 cup fat free mayo
4 tsp mustard
2 T cider vinegar




Steam cauliflower until tender.chop up eggs and cauliflower. Let cool.
Mix mayo, mustard and vinegar in small mixing bowl, set aside.
In large mixing bowl, combine all ingredients.
Stir in the mayo mixture and mix well.
Refridgerate
Makes about 8 - 1 cup servings

Your recipe tops any other LDL potato salad  :thumbsup:  I have made it twice this summer to go along with two different versions of LDL hamburgers.  My husband, who is also on LDL, preferred it to the old potato version!

I made this Friday to have Saturday.... It was wonderful... My daughter kept raving about how good it was... hubby loved it too,,, and kept saying, you can not tell this is not potatoes...

I AM GLAD EVERYONE LIKES MY POTATO SALAD, BUT I WANT YOU  TO TRY THE SAME RECIPE WITH RUTABAGAS INSTEAD OF CAULIFLOWER, TAKE YOU 3 OF THEM AND DICE UP SMALL AND BOIL TILL SOFT , THEN  MASH HALF AND LEAVE HALF DICED AND MIX IT WITH EVERYTHING ELSE IN THE RECIPE . THIS IS A BARN BURNER.  :thumbsup: OK TTYL NEEDWIFE  :thumbsup:

TY, I will try it this week. I made the meatloaf and pizza soup today. BOTH were outstanding and my boys enjoyed it!

I MADE SOME TONIGHT WITH CAULIFLOWER AND RUTABAGAS, IT WAS GREAT.  OK TTYL NEEDWIFE    :thumbsup:

I'm going to try Needwife's potato salad with cooked turnips! May not be as good as the cauliflower, though.

As I have said once before, this potato salad tops all the rest of the potato salad recipes posted in the salad topic. I have made it many times this summer and loved every bite!

Thank you so much for bringing this to the top.
I was going to make it with the butter beans. I don't have any of the FF mayo, which I am not a lover of, but now I have to run out and buy it because I have to try this with cauliflower and rutabegger's as we say here..
