Yummy Vegan Moroccan Style Chickpeas

I hope that this is LDL friendly...if not, please let me know what needs to be changed.  It sounded perfect and yummy!  You could actually use this as a main dish as well on LDL for dinner, and as a side dish for your main meal.


1 can (15.5 oz)chickpeas, rinsed and drained
1 can tomatoes with green chilies
1/2 cup diced onions
2 cloves garlic, minced
1 tbsp extra virgin olive oil
1 tbsp ground cumin
1/2 tbsp ground ginger
1 tbsp ground coriander
3/4 cup vegetable broth
Salt and pepper, to taste



Directions
Saute garlic and onion in olive oil over medium heat for about two minutes.
Stir in cumin, ginger and coriander.
Cook until onion is tender.
Add chickpeas, vegetable broth and tomatoes with juice and bring to a boil. Cover and simmer for ten minutes.
Serve alone or with steamed green beans.

Hi!

The Moroccan Style Chickpeas sound great....looking at the recipee it seems very much like Indian Chickpeas.....for those of you who like lentils/dals in addition to chickpeas....Indian cooking is the way to go.  There are many websites....just choose your search engine and go!!

only thing I would note is use low sodium fat free broth  :thumbsup: or the best equivalent possible
