Squash Relish

If you like chow-chow or similar things you will love this. I like to eat it with pinto beans. As a matter of fact I always eat my pinto's in a bowl so I then put the relish on top of the beans. It is sooooooooooo good.
4 cups chopped cucumbers
4 cups chopped squash
Soak in 2/3 cup non-iodized salt and 3 quarts of water for 3 hours and drain.
2 medium onions, chopped
2 medium green peppers, chopped
4 ounce jar of chopped pimentos in water
2 cups white vinegar
2 1/2 cups splenda
2 Tbls mustard seed
Mix the last 3 ingredients together in a large pot and bring to a boil.
Add the vegetables, bring back to a boil.
Put in sterilized jars and seal.
This makes 5-6 pints and you can use zucchini, white squash, yellow squash and cucumbers
The lady that gave me the recipe said it is good with either combination of vegetables.
I make this every year but this is the first time I have used splenda and it did not change the taste.
