Corn Frittata

Found this recipe in the Jenny Craig cookbook, nothing was changed.

       Vegetable cooking spray
1-1/4 cups fresh corn cut from cob (about 3 ears)
1/4    cup chopped green onions
1-1/2 cups egg substitute, thawed
1/3    skim milk
1-1/2 tsp minced fresh basil
1/8    tsp salt
1/8    tsp pepper
2       small tomatoes, cut into 12 wedges
1       cup (4 oz) shredded reduced-fat Cheddar cheese
        Fresh basil sprigs (optional)

Coat a medium nonstick skillet with cooking spray; place over medium high heat until hot.  Add corn and green onions; saute until tender.

Combine egg substitute and next 4 ingredients; stir well.  Pour egg mixture over vegetable in skillet.  Cover and cook over medium-low heat 15 minutes or until mixture is almost set.

Arrange tomato wedges near center of egg mixture, sprinkle with Cheddar cheese.  Cover and cook 5 additional minutes or until cheese melts.  Cut into 6 wedges.  Garnish with fresh basil sprigs, if desired.  Serve immediately.

Deborah,

I love Frittata's and serve them as a main dish for lunch with a salad.  The LDL crustless quiche recipes are made just like a frittata.  Here are three I have made and have enjoyed all of them.

Thanks VickiLynn I love trying new recipes, and sharing the ones I have....I hope before I die, I can make most of my recipes at least once...and the ones I love at least twice...I do love to cook...

I don't like the eggs substitutes, so how do I adjust the measurements with real eggs

I know I'm a little late with this, but just break fresh eggs into a measuring cup until you have the right amount...I'm thinking probably 3 large eggs might do it, maybe 4...and if you go a little over a cup and a half it's no big deal.
