Made this yesterday it was delish!  We are in Myrtle Beach in our RV celebrating the 4th.  The weather has been beautiful here..

Black Bean and Mango Salsa

1 can (15.8 oz)  Black Beans,
drained and rinsed
2 cups mango, diced* (may substitute w/pineapple)
1 cup sweet red bell pepper, diced
6 green onions, thinly sliced
¼ cup cilantro leaves, chopped
¼ cup fresh lime juice
1 tablespoon olive oil
1 seeded Jalapeno pepper, minced or hot sauce to taste
Salt to taste

Combine ingredients in bowl. Toss and serve.

Thanks for the salsa recipe. I love mangoes because they go so well with chicken or fish  :thumbsup: with I'm in the mood for Caribbean cuisine.

Country Girl brought this to our cookout today.  Very good.  I fixed Mexican chicken along with smokey boys and hotdogs.  My, most of my big crockpot of chicken was gone, and I had a lot of hotdogs, and smoky boys left.  I also had a skillet of cooked cabbage, and it was almost gone.  I had a lot of baked beans, and potato salad left.  I think some non LLD are becoming believers in how it works.  We are walking to our park for 4Th of July program and fireworks.  They will be over the beautiful Ohio River.  It is so hot here, so hope it cools down.  Happy 4TH.  :thumbsup: and  :D Joyful Friend
