No Heat Dill Pickled Green Beans

I have packages of green beans from last years garden that when I cook them I have to find a way to add taste since they are very bland.  I ran across this recipe for green bean to make them pickled.  It was such an easy recipe I decided to try it.  

Dill Pickled Green Beans

ingredients:
1 1/2 pound Green or yellow Beans, cleaned, ends cut off and cut to fit pint size jars.  Blanch 3 min.  Let cool
2c. white distilled vinegar
2c. cold water
4 cloves garlic - sliced
3 Tbs kosher salt
1 tsp mustard seed
1 tsp celery seed
1 c fresh dill

directions:

1)  Place all seasoning into bottom of jar.  Add beans and onions mixing evenly in jar.
2)  Measure vinegar, water and salt in container and stir until the salt dissolves.
3)  Pour liquid to 3 - 4 pints containing beans.  Make sure liquid covers beans.
4)  Seal the lid tightly and shake for about 1 min.  Refrigerate
5)  Wait 6-7 days, give jar a good shake each day.

Those really sound good.  I think I'll try them with canned green beans.  Pam

I have mine all made but of course I won't taste them until about a week from now.  It sure smelled good when I got every thing in the jar.
