Seasoned Olive Oil

Instead of using butter I always use my own seasoned olive oil usually
it consists of Extra Virgin Olive Oil, Fresh basil on the stem, Rosemary
on the stem, Thyme on the stem, 4 plugs of fresh garlic &  sea salt to
taste. As you experiment with it you can make different oils for different
foods. I personally use mine for everything. I have not used butter of
any kind in 2 years. It also makes a decorative gift to give to friends on
special occasions.

That sounds delicious. I'm a big olive oil fan, too, and my tip is to buy unfiltered olive oil -- the thick, green type -- then decant some into a wide-necked jar, like a honey jar, or even into a pretty container that you can bring to the table, and leave it in the fridge. It will thicken up so that you can spread it, like soft butter.

I prefer this to any of the soy margarines that we can get in the UK -- the wonderful-sounding Shedd's isn't available here.
