8 medim Tomatillos - coarsely chopped
1 tablespoon red onion - diced
1 small jalepeno pepper - diced
2 tablespoons fresh lime juice
2 tablespoons olive oil
3/4 cup corn
salt and fresh ground pepper to taste
combine all ingredients in bowl and enjoy!
I find this to be a little better after a few hours in the fridge, it gives the flavors time to mix.
