Hi Everyone,
As much as I love olive oil and balsamic vinegar (plus spices) on my salad, John really prefers Ranch salad dressing. Since I've not found an LDL acceptable dressing, I thought I'd try to whip one up. You know what? This one is DELICIOUS! Give it a try if you'd like.
Ranch Salad Dressing
1 cup Skim Milk, minus one Tablespoon
1 Tablespoon vinegar
1 cup lowfat mayo (I use Hellman's Reduced Fat Mayo)
1 ½ Tablespoons lime juice (fresh or bottled)
1 ½ teaspoons garlic powder
1 teaspoon onion powder
½ teaspoon salt
1/8 teaspoon pepper
½ teaspoon Worcester Sauce
1/8 teaspoon tabasco or chipolte sauce
Add vinegar to milk and stir - let sit for a minute or so until it gets a little thick. Add remaining ingredients and whisk together. Keep refrigerated. It's best if you can let it sit overnight before using, but it's still really good if you can't!
Bon Appétit!
Carolyn

John's exact words when he tried it the first time were, "That's Ranch". I couldn't believe it either, but it's delicious. Now, when you dip your fork, you don't have to feel anything but GREAT! Low fat, of course, doesn't mean low calorie, but this comes pretty close. I have a nutrition calculator on my laptop. If I can get it to limp to life, I'll run it thru there & post the nutritional value.
If you're chicken, just try half the recipe - but I can almost guarantee that you'll like it.
Love,
Carolyn

Carolyn,
I love Ranch Dressing too! This sounds deeee-licious!! Let us know the nutritional value...and maybe we could occasionally have it as a "DIP" with fresh veggies?
Thanks, gal!

Jeanne

Yes, I don't think I would eat it every day, but occasionally - SURE! And absolutely you could use this as a dip!

Oh, Gene - You are quite welcome. We finished off the last of ours two nights ago - you've reminded me that I need to make more!
