Yahoo! I found Little Mary's recipe. I thought I had printed this when it was available so I am going to post it here for you. Hope you enjoy it.
SPINACH & ARTICHOKE DIP
Ingredients:
1 small or 1/2 onion, finely diced (1 cup)
1 - 10 oz. box frozen chopped spinach, defrosted and drained
1 - 14 on packet of soft tofu, drained
1 small can (7.5 on) small artichoke hearts, drained
1/4 teaspoon pepper (or more to taste)
1/4 teaspoon lemon juice
1/4 cup grated fat-free Parmesan or Veggie Soy Parmesan Cheese
Put everything into a medium saucepan with a lid and stir well on medium-high heat, breaking up the pieces of artichoke and tofu with a spoon or spatula. Reduce the heat to medium-low. Cover and cook for 15 minutes, stirring occasionally. Serve it warm.
