Vegan Mayo - Lower Fat version

We have a couple of vegan housemates and they gave me this recipe. Everyone in the household is *very* interested in my new dieting adventure, so now they're bouncing ideas for foods "for Halla" (you know they want some, too!) around like a cheap rubber ball. Anyway, this is the "Mayo" recipe they gave me.
12 ounces lite firm tofu
1 tablespoon lemon juice
1/2 teaspoon salt
1 tablespoon olive oil
4 teaspoons seasoned rice vinegar
Blend all in food processor until smooth. Store in jar in refrigerator.
I'm already picturing adding things like roasted garlic to a batch of it.
OR - *gasp!* cilantro and lime! Then it could take the place of sour cream on some of my Mexican food!
OR - well, you get the idea. The possibilities are endless.
