Texas Caviar

SERVES 8

    2 cans Rotel tomatoes & chilies, mild,original or hot,your choice,drained well
    2 cans black-eyed peas, drained and rinsed
    2-3 large green peppers, diced small
    2 cups sweet onions, diced small
    1 bunch cilantro, finely chopped
    1 (8 ounce) bottle fat free Italian dressing
   
                                   *love*
  1. Place all ingredients in a large bowl and mix well.
  2. Cover and place in refrigerator to marinate for a minimum of 2 hours.
This is usually served with Tortilla chips but you could use vegetables to dip instead or maybe even serve with roasted vegetables.  I haven't made this since starting LDL so if anyone has serving ideas for this please share!

A serving size spoon of this would be a good topping for your salad......would not need dressing.

Great on top of zuchinni noodles!
I skip the FF dressing add EVOO and love it on top of a bowl of fresh greens..
Yummy! wow, am talking about zuchini again!! YES!!
