Sweet Onion Dressing I and II

Post by CodingQueen »

I found these on the internet. You could experiment by using a sugar substitute. All the others had brown sugar, corn syrup or both.

Ingredients for I:
•1 cup sugar
•1 teaspoon salt
•dry mustard
•celery seed
•1 medium Vidalia onion, grated, or other sweet onion
•2 tablespoons vegetable oil
•1/2 cup vinegar

Preparation:
In a saucepan, combine sugar, salt, mustard and celery seed. Add grated sweet onion, oil, and vinegar. Heat until sugar is melted. Cool and refrigerate, or serve as a warm dressing.
Makes about 1 1/2 cups.

Ingredients for II:
•1/2 large Vidalia onion
•1/4 cup vegetable oil
•6 tablespoons white vinegar
•6 to 8 tablespoons granulated sugar
•1 1/2 teaspoons ground dry mustard
•1/4 teaspoon garlic powder
•1/2 teaspoon celery seed
•ground black pepper to taste

Directions:
1.Slice 1/2 inch off both ends of onion.
2.Pierce onion skin in several places with a sharp knife.
3.Place onion in microwave-proof bowl.
4.Add a bit of water. Microwave 3 to 4 minutes until soft.
5.Set aside to cool.
6.When cooled, peel and place in food processor.
7.Puree until smooth.
8.Add remaining ingredients and process until combined and smooth.
