kumquats--I love kumpquats--those tiny little orange things.

One pint kumquats-washed.

Split in half and with your thumb dig out and toss the center.

Run them through the blender until rough chopped.  Add oil of your choosing (a good drizzle will do).  Add chopped onions and for sweetness add a 1/4 cup or less raisins.  Let sit in the fridge for a couple hours.

Use on fish and sliced pork.  Then look around to see what else you might want to add it to--I used it on a spinach salad instead of a dressing.

The neighbors have a kumquat tree and they don't like them!  I'm going to freeze a batch and see how it holes up.
