2 - 14.5 oz cans diced tomatoes
1 - 14.5 oz can diced tomatoes - drained (with green chilies)
2 tbsp. lime juice
1 fresh jalapeno pepper - seeded (chopped)
1/3 c. fresh cilantro (chopped)
2 cloves garlic (chopped)
Place all the above ingredients in a blender or food processor. Blend for 5 -10 seconds.
Pour into a medium sized bowl, cover and refrigerate for at least 12 hours, or 24 hours would give it more time for the flavors to blend.
After making this recipe, and experimenting, you will know how much you want to add for the jalapeno and cilantro. I found if you add one jalapeno (no seeds) it will be MILD. So it's up to you how many seeds you add and how hot you want it.

This sounds really good. This summer having a garden I am looking for recipes like this to use my veggies with so we will have home made instead of store bought items.
