Black Bean Dip

1 can black beans (rinsed & drained)
1 jalapeno (chopped) seeded or add according to taste
1/2 c. red onion (chopped)
1 roma tomato (seeded & chopped)
1 garlic clove (minced)
2 tbsp. lime juice

Mix all the above ingredients together.  Refrigerate at least 12 hours for flavors to blend.

I use to eat this dip with corn chips, but not any more!  It is such a good recipe that I hate to stop making it, so I'll have to find something else to have with it.  Any suggestions?

How about heated over a Taco Salad minus the taco? ie, bed of lettuce, ground meat (sirloin/chicken) diced tomatoes, onion peppers, etc?

Recently at a restaurant, I tried a combination of black bean dip mixed with chunky salsa to use as a dressing over a fajita salad instead of their regular dressing.  It was so good, that I make it at home now with fat free refried beans and my homemade salsa.  It is now my new favorite dressing.

Your welcome!  We just love it and remember to refridgerate it for 12 hours so all the flavors blend.  Like I said, we use to eat this with corn chips (yum yum), but since we have been on this diet, I tried it the other night on a salad with grilled chicken....it was really good!!!!!!
